I made this for dinner tonight and it was so good, I had to share! I have been on an egg kick lately, for whatever reason. I want an egg on everything I eat. Mostly fried, poached or boiled. On salads, sandwiches, as a snack, for brunch …. you name it. So you can imagine my excitement when I saw a picture of a Bacon, Fried Egg & Swiss sandwich in Family Circle Magazine. (Weird story about that. I have never heard of this magazine and randomly got it addressed to me in the mail. No complaints, since I found this sandwich and it has tons of great recipes and summer ideas. I just hope to don’t end up getting a bill for it.) Anyway, there was no recipe for the sandwich in the magazine, so I decided to try creating it on my own. Super easy and super delicious.
You will need 2-3 strips of bacon, 2 slices Swiss cheese, 1 egg, Dijon mustard, lettuce and 2 slices of bread.
First, fry the bacon. I did extra strips because my dog gets mad at me if I don’t share bacon. Or cheese. Or popcorn. Bad, I know.
Once cooked, place the bacon on a paper towel-topped plate to allow the grease to drain. Fry the egg in the bacon grease. While the egg is cooking, scrape as much of the bacon grease to the side of the pan where the egg is cooking and place the two slices of bread in the pan, allowing a little of grease to coat the bottom of the bread. Once slightly toasted, remove the bread and place a slice of Swiss cheese on each piece of bread (not the greased side). If you’re like me and like your cheese melty, stick the bread and cheese in the microwave for 15 seconds.
I like the yolk to gush out so I can dip the bread in it, so I sliced mine in half. Mmmmm, yummy!
