Healthy Blueberry Oatmeal Pancakes

I’m not much of a sweets-for-breakfast person. If I had my choice, I would have scrambled eggs, grits, eggs Benedict or corned beef hash each morning. My boyfriend, on the other hand, would have cinnamon rolls, donuts or anything with syrup every day of the week if he could. But there are definitely those days when you just NEED to have pancakes! Especially on a lazy Sunday morning. So, this morning, on this lazy Sunday morning, I woke up, got in a 45-minute workout, and indulged in yummy, homemade pancakes. But because I am trying to make better food and lifestyle choices, I opted for a healthier version, made with wheat flour and oatmeal. Whether you’re trying to watch your eating habits or not, I encourage you to try them. They’re delicious! (recipe below)

Healthy Blueberry Oatmeal Pancakes

Makes 12 pancakes


  • 1 1/2 cups skim milk
  • 1/4 cup canola oil
  • 1 egg
  • 2 egg whites
  • 1 1/2 cups whole wheat flour
  • 1/2 cup oatmeal
  • 1 tablespoon baking powder
  • 1/2 teaspoon allspice or cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup fresh blueberries


1. Lightly butter an electric frying pan or pancake griddle with no-stick cooking spray and heat.
2. Whisk (wet ingredients) milk, oil, and eggs together; combine remaining (dry) ingredients and add them to the wet ingredients; stir to combine all.
3. Pour 1/4 cup of batter at a time onto hot griddle to form 5-6″ pancakes; cook until surface of pancakes is bubbled; flip pancakes over and cook until both sides are light golden brown.
4. Top with lite syrup or your favorite fruit jam.
5. NOTES: The ratio of white flour to whole wheat flour can easily be varied (example: 1 cup white with 1/2 cup wheat flour) to suit your preference. Also, you may opt to use two whole eggs instead of fussing with egg whites. And for this recipe, your choice of either quick-cooking or regular old-fashioned oatmeal will work just fine.

For another option, try substituting the blueberries with sliced bananas. It’s delicious, too!
