We all know how important it is to eat breakfast in the morning, but many of us also know how much easier it is to sleep in for an extra 15 minutes than it is to get up in time to make breakfast. Grabbing a Pop-Tart or bagel on the way out is super easy, but let’s be honest … it’s not too great for our waistlines these days. Fear not! I am about to change your life. Well, maybe not … but this is a great idea for those who prefer real food to processed fruit stuffed inside a pocket of flour, sugar and sprinkles.

My boyfriend’s sister introduced me to this concept last year and my mornings haven’t been the same since.

Ladies and gentlemen … I give you: Eggs in a Mug!

I know, sounds weird and almost gross. But it’s not. It’s delicious and brilliant. Just crack an egg or two in a coffee mug, mix in any ingredients you’d like, and microwave for about a minute and a half. That’s it!

There are so many ways to do this and make it convenient. If you have a refrigerator at your office, stock up on scrambled egg goodies and keep them at work so you don’t have to bring it in every morning. Grab a dozen eggs, a pack of cheese and call it a day. Don’t have milk? Use water! Again, I know it sounds weird. But it actually makes them fluffy and cook perfectly, and cuts down the calorie count a bit. In this instance, I use two eggs, 1 T. water, diced peppers and onions, cubed ham and shredded cheddar cheese. Sprinkle with salt and pepper and you have a two-minute omelet on-the-go with no pans to clean up!

You could mix everything together in a travel mug at home and microwave it when you get to work. Microwave it at home and enjoy once you’ve reached your desk (or a long red light.) Throw the ingredients in a zip-lock bag with two eggs (not cracked yet) the night before for easy transportation to the office. Give it a shot – I promise you won’t be disappointed! Your waistline will thank you for giving up those sugary, carb-loaded treats as well.
